Frying chicken and fish is a demanding process, as the products involved are typically heavily-battered and take a longer amount of time to thoroughly cook. The 80 Lb Gas Chicken/Fish Fryer w/ CM Controller Master Jet Series (MJCFEC-SC) from Frymaster is specially-designed for high-production frying of chicken, fish, and other heavily-breaded products. This heavy-duty, 150, 000-BTU chicken and fish fryer comes equipped with a large 18 x 19 stainless frypot that holds 80 lbs. of oil and is operated via a CM computer controller with LED display that includes functions such as programmable time and temperature settings as well as boil-out and melt cycle modes. Its thermostat anticipates rapid rate of temperature rise, reducing overshoot in order to extend shortening life and produce uniformly-cooked product. Its open-pot design allows for a greater amount of heat transfer from its Master Jet burners. A deep sediment zone prevents particles of heavy breading from burning to a crisp, maintaining oil and product quality.
